Happy Marriage Cake – A Taste of Icelandic Tradition
One of the sweetest surprises at Hotel Breiðdalsvík is our beloved Happy Marriage Cake (Hjónabandssæla), a traditional Icelandic dessert that has been served at coffee tables for generations. We bake it fresh in our kitchen with care and love – just like the old times.

This heartwarming oatmeal and rhubarb cake gets its charming name from the belief that a good marriage, like the cake, is made of simple ingredients that come together to create something comforting, strong, and a little bit sweet and tart.

Happy Marriage Cake (Hjónabandssæla)
200g rolled oats
150g flour
200g brown sugar
1 tsp baking soda
1 tsp vanilla
200g butter
400g rhubarb jam

Mix oats, flour, sugar, baking soda. Add butter + vanilla, make a crumbly dough.

Press 2/3 into a pan, spread rhubarb jam, top with remaining dough.

Bake at 180°C for 30–35 min. Serve warm with skyr or whipped cream.
